Leftover Makeovers: Turning Odds and Ends Into Meals

A handful of flexible recipes can absorb almost anything left in the fridge at the end of the week.

Written by Theo Lindqvist

The half onion, the last two potatoes, the cooked rice from Tuesday โ€” individually they are not a meal. Together, with the right approach, they often are.

The secret is a few forgiving formats that work with whatever you have.

The everything formats

  • Frittata or omelette: eggs plus any cooked veg, cheese, or meat
  • Fried rice: day-old rice, any veg, soy sauce, an egg
  • Soup: softened veg, stock, a blender
  • Pasta bake: cooked pasta, sauce, odds and ends, cheese on top
  • Wraps and quesadillas: leftover fillings, a tortilla, a hot pan

Plan a leftovers night

Make one evening a week a fridge-clearing night. Lay everything out, decide what needs eating first, and choose a format. It saves money and stops forgotten tubs ending up in the bin.

Safety rules

Cool leftovers quickly and refrigerate within about two hours. Eat refrigerated leftovers within a few days, and reheat until piping hot all the way through. Cooked rice needs particular care: cool it quickly and reheat only once.

Freeze before it is too late

If you will not get to something within a day or two, freeze it. Label tubs with the contents and date. Bread, cooked grains, sauces, grated cheese, and chopped herbs in oil all freeze well.

This is general sustainability information. Recycling, composting, and disposal rules vary by municipality โ€” check local guidance. Cost and energy savings are estimates and depend on your home and usage.
